Vegetarian Quesadilla

Ingredients:
- 2 Tortillas
- Extra Virgin Olive Oil
- Cheddar Cheese
- Black Beans
- Sliced Mushrooms
- Chopped Tomatos
- Chopped Bell Peppers
- Minced Jalapeño Pepper
- Minced Garlic Clove
- Salt
- Black Pepper
- Oregano
Tools Needed:
- Non Stick Frying Pan
- Bowl
- Cutting board
- Spatula
- Colander
Cooking Instructions:
- Wash and Drain Beans. Pour can of beans in a colander over the sink. Run cold water over the beans.
- Heat 1 tbsp of Olive Oil. Saute the onion and garlic for 2 minutes
- Saute Mushrooms for 3 minutes. Add more oil if necessary.
- Add Tomato, Bell Pepper and Jalapeño Peppers. Season with 2 tsps of Oregano, 1/2 tsp of salt and 1/2 tsp of black pepper.
- Stir together for 2 minutes
- Season Black Beans with 1/2 tsp of Oregano, 1/2 tsp of salt and 1/2 tsp of black pepper.
- Add Black Beans to the pan and stir together. Continue to cook until there is no liquid in the pan.
- Put Black Bean mixture in bowl.
- Heat Tortillas in your pan. NOTE: The video shows two tortillas, You can cook with 1 tortilla and fold tortilla in half.
- Top with Shredded Cheddar Cheese
- Top the cheese with black bean mixture
- Top with more cheese
- Cover with 2nd tortilla (or fold in half if you are cooking 1 tortilla)
- If you are cooking 2 tortillas: Cook for 2 minutes, then flip tortilla. Cook other side for 2 minutes. If you are cooking 1 tortilla: Cook for 1 minute, then flip tortilla. Cook other side for 1 minute.
