March 16, 2021: Bacon Wrapped Jalapeno Poppers

Hi Everyone!  Last cooking class on Zoom!!  Next term we will be cooking in person!!  Yay!!  Today we are making Bacon Wrapped Jalapeno Poppers.  I couldn’t find the link to the recipe that was chosen last week.  I did find one that is sort of similar, and the link is below.

Next class we are making Shrimp Scampi.  It really is a very quick and easy recipe that anyone can do.  Shrimp Scampi is a very affordable recipe to make at home.  It’s a great birthday or other special occasion dinner.  Making this for your friends and family is sure to impress them.  The recipe in the link above calls for using wine… below I have included a link to a page that lists some great substitutions for wine .  https://www.healthline.com/nutrition/wine-substitutes   

We also talked a bit in class about crab.  I love crab!  It’s super delicious!  Unfortunately, cooking a whole crab doesn’t quite fit with the quick and easy theme of the class.  But, it is so delicious … and going crabbing at the coast is a really cool activity… So, I included some links below to some great videos on how to catch, and how to cook crab.  Hope you enjoy!

Smoothies are delicious, and are also a great way to get in several servings of fruits and veggies.  Below are the recipes that Grace & Seiji shared.  I was so happy that Morgan & Grace made smoothies too!

My smoothie recipe included:  1/4 cup ice, 1/4 cup half & half, 1/4 cup berries and a dash of chia seeds.   I think that I will invest in a real blender and make smoothies more often! 🙂  Unfortunately, I drank it before getting a picture.  The photo to the left is a picture I found online that looks a lot like the smoothie I made.  Another great thing about this recipe was…  I didn’t have to buy anything! 🙂

January 13, 2021: Yumm Bowls

I really enjoyed making the yumm bowls yesterday!  So delicious and easy to make!  To the left is a picture of the yumm bowl I made for lunch yesterday.  I forgot to add the cheese so I just put some on top and mixed it in.  Hope that you guys try to make this dish for yourself.  As always please make substitutions as needed.  Get creative if you like with different veggies, toppings and sauces.  (Cafe Yumm, and most grocery stores sell jars of Yumm sauce already made.  I believe the cost is about $6.50 for an 8 oz. jar.)  

 

What you will need to make an Original Yumm Bowl:   Cooked rice, beans, shredded cheese, salsa, diced fresh tomatoes, sliced avocados, sliced black olives, sour cream, cilantro, and Yumm Sauce.  

Before going to the grocery store I checked my fridge and pantry to see if I had any of the ingredients needed for this recipe.  Turns out  that I already had: rice, beans, cheese, salsa, black olives, and sour cream.  That makes my shopping list for this week super short!  I will only need to buy an avocado, some cilantro, a tomato, and  yumm sauce.  I estimate that this will cost about $8.00.  And, that I will have enough food for about 4-6  servings.   *update … I spent $9.17 when I went shopping for the rest of my ingredients at Safeway.  The Yumm sauce was $6.49, the avocado was 1.00, the cilantro was .79, and I spent .89 on a 2 medium Roma tomatoes.

January 6, 2021:  Quick & Easy Breakfast/ Home Fries & Soft Boiled Eggs

1st class of the new year! 🙂  Today we brainstormed some quick and easy meals to make this term.  And, I shared how to make a great quick and easy breakfast, home fries & soft boiled eggs.  I made the home fries with a left over baked potato in a skillet with a little butter, salt and spices.  So easy and so tasty!  To make the soft boiled egg place your eggs in a pan of cold water, turn burner to high, when the water begins to boil start your timer and let boil for 7 minutes.  Remove from heat let stand 1 minute, then safely poor hot water down the sink.  Fill your pot with cold water and let sit for several minutes to cool and stop the cooking process.  Peel, slice and enjoy.  The egg whites should be firm and well cooked, the yolks should be soft and creamy.   Below is a picture of my finished breakfast.  I sliced an orange to round out the meal.
