Thursday 5/7 : Penne Pasta  w/creamy white sauce (No class Friday 5/8)

This week we we had a request to do some pasta dishes.  On Thursday we will be making a creamy garlic penne pasta dish.  On Friday we will be trying gluten free pasta salad.  One week #2 yummy recipes! 🙂

Thursday’s class also made chicken breast & steamed broccoli to round out their meal.  We used the first option in the video below to cook our chicken breast.  

 

 

April 29 & 30: Monster Cookies!

In Thursdays class we used the recipe in the link below.   The cookies were light, crumbly, a little dry… not chewy.  All in all very tasty especially if you like to dunk your cookies in milk! 🙂

In Fridays class we made the recipe from the video below.  We did alter it a bit by using oat flour instead of all purpose flour.  We made our own Oat flour using the Blend-tech! 🙂  We decided that if we were to use this recipe again, we would reduce the amount of butter to 1/2 cup (1 stick), because the cookies turned a little thin and ran together a little bit.  However, they were oooey, gooey and delicious! 🙂

Ingredients:

10 Tbsps softened unsalted butter ( maybe reduce to 8 tbsps)

2/3 cup brown sugar (packed tight)

1/4 cup white sugar

1/2 cup peanut butter

1 large egg

1 tsp vanilla

1 cup all purpose flour (we used oat flour)

1 tsp corn starch

3/4 tsp baking soda

1 cup oats

3/4 tsp salt

1/2 cup m & m’s

2/3 cup chocolate chips

optional add ins:  walnuts, hazelnuts, macadamia nuts, raisins, dried cranberries, white chocolate chips, butter scotch chips etc… 

 

April 22 & 23rd:

Personal Pizzas!

We used a day old sourdough round loaf of bread and sliced it thick for our crust.  The topping we used were slightly different, but the main idea is the same.  We also made personal pizzas with a dough that didn’t require yeast… that wasn’t as successful.  However, everyone that tried the sourdough bread pizzas gave them a big thumbs up!  I didn’t get any snaps of our pizzas but the photo on the left hand side looks a lot like the one I made.  Super easy, beautiful and delicious!  

April 15 & 16, 2021:  Tacos!

It was great to have in person cooking classes this week!  So happy to have students back in the building!  The Thursday A.M. & Friday cooking classes made ground beef & refried bean tacos w/ soft white corn tortillas, and super fresh pico de gallo.

Next week we are making personal pizzas, and exploring all the ways to create delicious pizzas at home with only a few ingredients.  

  

April 8, 2021: Black Bean Burgers/ Sliders

In the video lesson below we learn about pantry staples, and how to prepare delicious meals with the ingredients we have on hand.  Nicole prepares two dishes in this video from ingredients in her pantry:  Black Bean Burgers, and  Creamy Chicken, Artichoke & Mushroom Risotto.  I’m planning on making Black Bean Burger Sliders using this recipe.  Can’t wait! 🙂
